Definition
Christianity is the philosophy that claims that Jesus of Nazareth is the Son of God and Jewish Messiah (or Christ); that he was crucified, died and was buried, and rose again three days later; that his death was an atoning sacrifice for the sins of his followers; and that placing one's trust in Jesus is how any sinful person can be forgiven and made righteous before their creator.

I'm afraid I don't understand your question. These two verses say the same thing. In fact, the verse in John 18:9 is a direct reference to the message also contained in John 17:12. Here are the verses: John 17:12 (Christ is speaking to the Father) "While I was with them, I was keeping them in Your name which You have given Me; and I guarded them and not one of them perished but the son of perdition, so that the Scripture would be fulfilled.

"What is an easy way to demonstrate that open theism is false?"
Open theism is the belief that god exists, but does not know the future outcomes of human choices. Instead, he finds out about them when they happen. Open theism renders all human conclusions completely irrational. A god who does not know what the future holds clearly did not design the future. And if he did not design the future, then there is no good reason to believe that it must behave in the way he wants it to behave.

"What happens to people who don't accept what you claim?"
Nothing happens to people who don't accept what I personally claim. However, Jesus made some striking statements about those who do not accept HIS claims. He taught that the two greatest commandments were to love the Lord God with all your heart, soul, mind, and strength; and to love your neighbor as yourself. (Matthew 22:37-39) In Luke 16, Jesus tells a story about a rich man and a beggar named Lazarus.
